@Bhess @SouthDallasFood I’ve been doing this for years. Brine turkey for 2-3 days. Pull the skin away from meat and put butter under the skin around breasts/thighs/legs. Stuff with mirepoix/apples/lemon. Soak cheese cloth in melted butter and place over turkey. Cook 12-15 min per pound until done.

Looks like we’re all gonna be wrapping our Thanksgiving turkey and cheesecloth this year, here for it.
