Thinking about all the cases where a mechanic can't be used is the hardest part of adding mechanics. Like "oh I want blocking in my game." Okay, but you can't block EVERYTHING, right? So now you have to figure out 50 ways to make things difficult to block or unblockable

Considering how often #mecha settings are branded as "knights but in robots," I wonder if there's any mecha setting where pilots are trained in techniques to get around the armor and aim for weak spots, rather than just blast through it with your guns.

There's specifc techniques for armor fighting. In plenty of them, you'd use the sword as a lever to force your blade into an armor's gaps. Plenty of these techniques involve grappling (or, when countered, quickly devolve into it).
