Even if the restaurant were to pay better, it wouldn't be in the range of 30-120/h like that tip would be across 1-4 tables. And the server would still expect tips they don't need to declare for taxes, which is one of the biggest reasons to go into tip-based jobs.

That tip goes to them and not the kitchen. That's $35/h that you're paying to the server. While they shuttle for multiple tables.
