Flavorful Kitchen Adventures
Pan‑Seared Mediterranean Cod in Tomato Basil Sauce Ingredients 4 cod fillets (5–6 oz each), patted very dry 1 tsp kosher salt, divided 1/2 tsp black pepper, divided 2 tbsp olive oil, plus more to finish 3 cloves garlic, thinly sliced 1/4 tsp red pepper flakes (optional) 1 pint cherry or grape tomatoes, halved (or 2 cups diced tomatoes) 1/3 cup dry white wine (or seafood/chicken broth) 1/2 tsp sugar or honey (optional, to balance acidity) 1 tbsp capers, drained (optional but great) Zest of 1/2 lemon + 1 tbsp lemon juice 1/4 cup fresh basil, thinly sliced (plus extra for garnish) Sea salt flakes to finish (optional) Instructions Season the fish Pat cod very dry. Season both sides with about 1/2 tsp salt and 1/4 tsp pepper. Sear the cod Heat a large skillet over medium‑high. Add 1 tbsp olive oil. When shimmering, add cod and sear 2–3 minutes until the first side has a light golden crust and releases easily. Flip and cook 1–2 minutes more (it will finish in the sauce). Transfer to a plate; tent loosely. Build the tomato basil sauce Lower heat to medium. Add remaining 1 tbsp olive oil. Add garlic and red pepper flakes; cook 20–30 seconds until fragrant (don’t brown). Stir in tomatoes, remaining 1/2 tsp salt, remaining pepper, and the wine. Simmer 3–4 minutes, stirring, until tomatoes start to burst and juices reduce slightly. Add sugar/honey (if using), capers, lemon zest, and lemon juice. Simmer 1 minute more. Taste and adjust salt/acid. Finish the fish in the sauce Nestle cod back into the skillet (and any juices). Spoon sauce over the tops. Cook 2–4 minutes at a gentle simmer until cod is opaque and flakes easily with a fork (internal temp about 135–140°F). Basil and serve Turn off heat. Fold in sliced basil and a drizzle of good olive oil. Plate fish with plenty of tomato sauce on top. Finish with extra basil and a pinch of sea salt flakes if you like. Serve with Crusty bread or garlic toast (to catch the juices) Lemon orzo, couscous, or herbed rice Simple green salad or sautéed greens Tips Any firm white fish works: halibut, haddock, hake, grouper, or sea bass. For extra body, whisk 1 tsp cold butter into the sauce off heat. Want more veggies? Add a handful of baby spinach to the sauce in the last minute to wilt.

The Israeli army has relentlessly attacked Lebanon for a second day in a row despite a ceasefire being in place. Yesterday more than 50 civilians were killed and today so far at least 20 people have been killed.

Butter Chicken 🧈 🐔 Spices •Garam masala •Turmeric •Red chilli powder •Cumin (with salt) •Dry fenugreek leaves (kasuri methi) •Fresh coriander Ingredients •Onions •Garlic •Ginger •Crushed tomatoes •Cream •Milk •Cashews •Honey •Butter •Shakkar (unrefined sugar) •Tandoori chicken (prepared separately) ⸻ tandoor chicken Red chilli powder Yoghurt Lemon juice Cumin homemade Garam masala Salt Ground pepper turmeric Ginger garlic paste Instructions 1.Grill the tandoori chicken or cook it in an air fryer. 2.In a pan, fry fresh onions, garlic, and ginger in oil until they become lightly browned. 3.Add the spice mix and cook on low heat until the raw aroma disappears. 4.At the same time, dry-toast the cashews in a pan until they turn brown and release a nutty aroma. 5.Grind the toasted cashews in a spice grinder. 6.Mix the ground cashews with ½ cup of warm milk and stir well. 7.Add the crushed tomatoes to the pan. 8.Pour in the cashew–milk mixture, then blend the sauce with an immersion blender until smooth. 9.Return the sauce to the heat and add shakkar (unrefined sugar), cream, honey, butter, and salt to taste. 10.Add the chopped tandoori chicken. 11.Let the curry simmer for about 30 minutes. (add a little garam masala too at this point) 12.Finish with fresh coriander and dry fenugreek leaves (kasuri methi) before serving.

Are the people calling this ragebait cause I put indian cuisine in S tier serious? Indian food is not what you see in those street food videos. One of the best meals I have ever had was butter chicken/murgh makhani when I was in the UK. Some people are so uncultured.

Israel's Lebanon campaign is becoming one of the greatest strategic blunders in its history. It is rebuilding Hezbollah's prestige, wrecking ties with Washington, and spending elite officers on a line with no purpose. Here is how: 1) Senior officers know the current fighting serves no useful aim. The IDF holds a line ten kilometers inside Lebanon that does not even control fire over northern Israeli towns. The army tells the cabinet "you decide, we execute," with no real debate on objectives. 2) The cost is rising fast. Lt. Col. Dor Ben-Simhon, commander of the 52nd Armored Battalion, and three of his tank crew were killed near the Ali Taher ridge. He was the fourth commander of that battalion since the war began. His three predecessors were all wounded. 3) It is rebuilding Hezbollah's prestige and influence. Iran understands the trap Israel set for itself and is spurring Hezbollah on. A group that was battered now gets to stand firm against the IDF, link Lebanon to the Gulf, and extract concessions from Washington through Israel. Israel is handing it a comeback story. 4) It is wrecking the US relationship. Trump keeps imposing ceasefires because he fears Israel will sabotage his Iran track. Vance was blunt: Israel should stay quiet and accept terms because its dependence on the US is nearly total. He hinted at consequences, possibly even arms limits. 5) The political story is collapsing. Netanyahu cannot sell success when the Iran campaign ended without its promised achievements and soldiers keep falling in Lebanon. The polls are starting to show it. 6) The leadership is unserious. One minister called for killing a thousand Lebanese per IDF casualty. Another mourned Ben-Simhon and got his first name wrong. Not one government representative came to the battalion commander's funeral. Bennett did. 7) It is weakening the Lebanese government. The Aoun-Salam government staked its credibility on disarming Hezbollah through the Lebanese army, a plan that was popular outside Hezbollah's base. Continued Israeli strikes hand Hezbollah its strongest argument: it will not give up its weapons while Israel keeps bombing. Every strike undercuts the one government actually trying to disarm it. Bottom line: Israel set out to restore deterrence and secure the north. Instead it is restoring Hezbollah's standing, draining its friendship with Washington, and dying on a line with no purpose. الحادثه دى بتتكرر يوميا انا عشتها كنت واقفه ع رصيف نادى وطفل سايق عربيه بدون رخصه باتجاه عكسى خبطنى ومكتفاش علشان يهرب داس عليا ولحد الآن هو عايش ف نعيم أهله عرفوا يحموه انا عجزت وحياتى ادمرت اتقلبت 180 درجه من حال لحال .ووالداى مات قهرا عليا ما قدر يتحمل وهنقعد نغنى يومين

اللي في الصورة دي بنت عندها 15 سنة بس وبدل ما تكون عايشة سنها الطبيعي كانت سايقة عربية من غير رخصة ومن غير أي إحساس بالمسؤولية ! والنتيجة؟ ان فيه بنت اسمها هدير، عندها 24 سنة، راحت ضحية تهور واستهتار مالهاش أي ذنب فيه. هدير كانت بائعة شاي وقهوة على طريق شارع الجيش بحدائق الأهرام. بنت غلبانة ومكافحة، زي آلاف البنات اللي بتنزل كل يوم تدور على لقمة عيشها بالحلال. كانت بتقف من 6 الصبح لحد 11 بالليل، تستحمل الحر والتعب عشان تساعد أمها وأخواتها بعد وفاة والدها، لأن الحياة حطت المسؤولية على كتفها بدري. النهارده الصبح كانت واقفة زي كل يوم في مكان رزقها، هي وصاحبتها، بيشتغلوا وبيحاولوا يطلعوا يومهم بالحلال. وفجأة... وفي ثواني. عربية مسرعة خرجت عن السيطرة وخبطتهم بقوة. هدير فقدت حياتها في الحال، وصاحبتها اتنقلت للمستشفى بإصابات وكسور وكدمات في أنحاء جسمها. لكن اللي صدم الناس أكتر من الحادث نفسه، إن شهود عيان أكدوا إن البنت المتسببة في الحادث كانت واقفة بعد اللي حصل وكأن مفيش روح إنسانة لسه راحت. واحدة من السيدات اللي شافت المشهد كانت منهارة من البكاء وبتواجهها بحجم الكارثة اللي حصلت، لكن رد الفعل البنت كان صادم لكل الموجودين و ضحكت و عملتلها إشارة🖕 مشهد خلّى ناس كتير تتساءل: إزاي حد يتسبب في موت إنسانة بريئة ومايبقاش عنده أي إحساس بحجم المصيبة؟ هدير ماكنتش مجرمة، ولا مؤذية، ولا ماشية تأذي حد. كانت بنت بسيطة بتحارب عشان تعيش بكرامة، وتساعد أهلها، وترجع آخر اليوم بمبلغ بسيط يسند بيتها. النهارده مكان عربية الشاي فاضي... والبنت اللي كانت واقفة عليه كل يوم عشان ترزق، رجعت لربنا قبل ما ترجع بيتها. ادعوا لهدير بالرحمة والمغفرة، وربنا يربط على قلب أمها وأهلها، ويصبرهم على وجع مفيش كلام يوصفه. ومتنسوش اسمها... هدير. البنت اللي كانت بتجري ورا رزقها بالحلال، فسبقها قدرها قبل ما توصل آخر اليوم. 💔 #هدير_بائعة_الشاي
