I can't find A2 cottage cheese anywhere so I made my own and it only cost me $2.25 for a cup's worth. It doesn't taste like store bought cottage cheese at all and that's fine by me. It's really tasty! Bring 4 cups milk gently to 190 degrees and remove from heat. Add 4 tbs white vinegar (or lemon juice) and stir. Let sit for 15 minutes then strain. Add salt to taste and a tbs or two of heavy cream if you like it wet. I liked it dry so I did not add cream. ChatGPT hooked me up with the recipe.
