No overload of cream, butter or chillies. Just balance, mustard, fermentation, texture and freshness. Dahi Bara Aloo Dum (popular street food), Drumstick-Brinjal Besara, Chhena Tarkari, Chakuli Pitha (like dosa) Aloo Patra Besara… all made at home.
