@BBQPitmasters In my opinion, the best shows were: "Here is your stack of blocks, some grate, and a select brisket and grocery store rack of ribs. You have 12 hours. Good luck." You learned who really knew how to cook.

@meathead I wanna smoke 12+ hrs but I have 2 kids under three. But I love bbq so I"cheat" with sous vide, liquid smoke, an oven. I think it turns out great, hits all the spots and everyone else loves it and I cook for people from Memphis and KC. If you do anything right and care, it's good

Of course not. I am just pointing out that the snobbery around liquid smoke is silly. I spent 20 years in the wine world as syndicated wine critic for the Washington Post and I see wine-like snobbery growing rapidly in BBQ. Snobbery about gas grills, pellet smokers, thermometers, and liquid smoke. Silliness.
