Yes, and I loved an even earlier version of the series with Chris Lilly, where we made pitmasters cook on the same model cookers, same wood, exact same cuts. Now THAT is competitive ‘que!

@meathead I wanna smoke 12+ hrs but I have 2 kids under three. But I love bbq so I"cheat" with sous vide, liquid smoke, an oven. I think it turns out great, hits all the spots and everyone else loves it and I cook for people from Memphis and KC. If you do anything right and care, it's good

Spent thousands of hours, either cooking or shooting the tv show. I have watched pitmasters w/the finest trucks, fastest thermometers, stainless pits hung w/bells &whistles, smoking gleaming prime Wagyu’s. And their food is crap. Just make it good, goddammit, nothin else matters.

Of course not. I am just pointing out that the snobbery around liquid smoke is silly. I spent 20 years in the wine world as syndicated wine critic for the Washington Post and I see wine-like snobbery growing rapidly in BBQ. Snobbery about gas grills, pellet smokers, thermometers, and liquid smoke. Silliness.
