The way I personally interpret this is: Crisis Core is the events seen through Zack’s eyes, so you see a slightly softer, more sympathetic view of Sephiroth
FF7 OG/ReTriology is the events seen through Clouds eyes. You see a colder, more sinister view of Sephiroth.

I think I prefer how Sephiroth looked in the original. In Crisis Core, when he sees Jenova, there’s some sort of child like joy and fulfillment in his eyes, but in the original, He’s at his wits end, and a deep hatred seeps through in his eyes, but for the people of this planet
