My first, last, and only definitive statement in the taco wars. The best taco in the world, here we go--Nuevo Progreso, Tamaulipas, Mexico circa early 1990's. Gortari was president, TV Azteca had just been launched, and NAFTA was still warm from just being signed. The recipe is as follows: Walk into the tortilleria around noon and ask for a kilo fresh from the machine (not from the stack!). Then, drop by the abarrotes a few doors down and find the most perfectly ripened avocado you can from the little pyramid ("A su mero punto."). Finally, buy a cheese from the lady who made them earlier that morning next to the zapatero. You don't need plates. Open up the kilo and slice some avocado and cheese into the hot tortilla on top. Roll and eat. Every time I eat this, it takes me back to playing on the streets of Progreso, the people from the town, the tourists, and of course--all the delicious food we had there. My happiest memories. I love to try all the new ways that chefs in various cities reinvent this eternally classic food. But when I get home, I roll up a fresh aguacate con queso. It will always be the best taco in the world to me. ♥️ Cheers!
