I made @eda2026's cottage cheese. It's not quite what I was expecting but it's good. It's like cottage cheese and feta made a baby. It's tangy, super easy to make and very low in carbs. Grok says I don't have to boil it and that I can make this on a stovetop in a ceramic bottomed pot or double boiler. The trick is to get it between 135-175° to get the curds to separate. The lower the temp, the creamier the cheese. I baked this at 400 for about 40 minutes, strained and cooled it for about 4 hours. I quite liked the end result. Will try it in eggs today! Also, my result is more like farmer’s cheese than cottage cheese. The difference being the amount of moisture in the finished product. The less moisture, the fewer carbs. Grok says 100g of this is 1-3g carbs. Oh and, yeah. I like this better than cottage cheese.

@CaryKelly11 I know my honey is 100% real. From my bee yard. Not so sure about the maple syrup I have access to in the Deep South. It takes a lot less honey than maple syrup for the same amount of “sweetness”. I’ll stick with honey for the small amount of times I need any sweetener!

Ever really compared honey to maple syrup? Maple syrup has 4.1× more potassium 6.7× more zinc 10.5× more magnesium 17× more calcium 32× more Vitamin B2/riboflavin 36× more Manganese And 36% less sugar than honey. I’m not telling anyone to go out and buy a jug of maple syrup although I do use small amounts as a sweetener in a few recipes. I’m just saying maybe honey is overhyped. Numbers based on USDA data (100g portions)

I made carnivore “bread” (eggs, cottage cheese, panko, butter). It is so good! Satisfies my “baked goods” craving. I don’t know who posted the recipe that I copied into my notes. I will comment the recipe here. Yummy & easy!

@DoctorTro Yep, I’ve basically plateaued the last month. Stress: staying at the hospital with my 4 month old grandson after open heart surgery; poor sleep; my daughter left a large jar of nuts on the hospital room window sill. The baby is home now, more surgeries to follow.
