@RadeeohRich@FoodNetworkCA@GuyFieri Keep meat moist and tender it needs to be smoked for long period of time to breakdown fat and collagen..but if you cook it too long it will start to dry out is why it's wrapped..you can do it unwrapped it will come down to your personal preference and heat or fire management
Quick question for the foodies. Every recipe I've seen for Brisket says to wrap it in foil or butcher paper, for the last bit of the smoking process. But when I watch shows like DDD, lots of the restaurants don't do that. Why? Better bark? @FoodNetworkCA@GuyFieri
