Houston Cougar Baseball resumes Big 12 play in a series against the Baylor Bears beginning tonight at 6:30PM from Schroeder Park in Houston. After Tuesday's insane game against Texas, Houston now begins a series at home against Baylor and should be able to continue pick up where they have left off offensively these last four games. The bats have come alive in high-leverage spots here of late, but after starting the year strong, it has been Houston's pitching staff that has suffered their own shortcomings, and this series against Baylor presents Houston's best opportunity to continue to stay on a consistent path forward through the season. Travis Sanders at Shortstop has been Baylor's best hitter this season batting .386 with 8 doubles, 1 HR, and 15 RBIs. Brady Janusek in the outfield has brought solid power at the plate for Baylor batting .348 with 4 doubles, 5 HRs, and 22 RBIs. Brytton Clements at 3rd Base for Baylor has also been a bright spot as the Redshirt Freshman is batting .305 with 5 doubles. Houston starts Connor Udland and he may be asked to go as long as he can after the way the last four games have gone. He'll need his Curveball to help him get ahead in counts early and often against this Baylor lineup. Lucas Davenport starts tonight as he is the Friday night starter for Baylor. Davenport has not pitched more than 5 innings in a game this year, but Baylor has won in all of his starts. It'll be imperative of this Houston lineup to work his pitch count early in this game and make him throw long innings. Even if it doesn't result in runs, being in high-leverage situations consistently will wear you down faster, and with how Houston has been scoring their runs of late, this is a great chance to keep the pace going into this series with Baylor. Tyler Cox has to be the player to watch tonight for Houston; both him and Tre Broussard have been on an absolute tear at the plate, and TC's situational hitting has been phenomenal. I hope this coaching staff keeps Easton Winfield in the lineup at DH. He is seeing the ball really well, and still having power at DH no matter if it's Winfield, Carsten Sabathia, and even Cade Climie in that spot has been a huge plus in this lineup. Houston Cougars vs. Illinois Fighting Illini 🏀 South Regional Semifinal Tip-off 9:05PM Central From Toyota Center in Houston, Texas In what will be the most telling game about this Houston team, this game will be decided on if Houston's defense can be consistent and stout for 40 minutes. Illinois has one of the most efficient offenses in the country; there are similarities in their play compared to Florida's team last year in that game we lost. Illinois has great balance in their attack with Keaton Wagler, Andrej Stojakovic, and Kylan Boswell running their backcourt and feeding the "Twin Towers" with the Ivisic brothers on the inside. This just feels like how Florida last year ran their offense with Walter Clayton Jr, Will Richard, and Alijah Martin in their backcourt with Alex Condon being the go-to man in their frontcourt. Illinois shoots very well from inside shooting around 58% and can not only create runs, but keep them too. Houston will need to limit second-chance opportunities the Illini create and force their guards into making tough decision with the ball. Halfcourt defense will be instrumental in this game as it gets down to the wire, and whoever can break the other teams rhythm first in the end will come out on top. Houston's physicality has to be imposing on this Illinois team if they are going to play one more in Houston on Saturday. It starts with Joseph Tugler not getting into foul trouble early, and imposing his defense. I also expect Mercy Miller, Chase McCarty, and Ramon Walker to play important roles in tonight's game especially Walker with his experience in Tournament games. In what is a grand opportunity for this program, school, and city, tonight is about what makes Houston special. Whether it is the city, this school, or this team, we know that we are cut from a different cloth and tonight will show exactly what that looks like. #ForTheCity #GoCoogs #Coogs #MarchMadness #Sweet16 #Big12

Tips - When handling raw meat (of any kind), please use gloves if possible, or wash hands immediately with soap and water after handling. - I used 80/20 ground beef, but if you are using a leaner cut like 90/10 or 96/4 (yikes), hard sear one side of the burger for 3-4 minutes, and then flip and cook the other side for around a minute. If you let it rest after cooking it like this for 4-5 minutes, it should still be relatively juicy and cooked through (but only if it rests). - You could also make the Makeshift Honey Mustard Aioli ahead of time and refrigerate it for as little as 30 minutes to thicken it. The apple cider vinegar will loosen it, and unless you add more mayo or honey, it will be on the thinner side of sauces. - If you have experience cooking, you should be able to time all of this where either your shallots are done frying within a minute or two of your burger being done and vice versa. Ingredients - Ground Beef (Doesn't matter lean/fat ratio I used 80/20) - Burger Buns - Cheese - Shallots - Salt and Pepper - Frying oil/fat (Don't use cheap fry oil; I used maybe 1/2 cup of beef tallow frying the shallots) - Mayo -Dijon Mustard - Honey - Apple Cider Vinegar Recipe -Roll your ground beef in a tight ball weighing between 3-4oz (whatever your preference) - Preheat fry pan over medium-high heat -Preheat a small saucepot over low heat and add your frying oil/fat for the shallots - Pre-smash your burger between two parchments to prevent ground beef from sticking with an oven sheet, unused fry pan, pie crust, etc. Season to taste once smashed. *** If you have a burger press, once pan is done preheating, place your rounded up burger into your fry pan, cover with parchment, flatten completely with the burger press, and season to taste. - Prepare shallots by peeling off first layer and cutting off the root end. - If you have a mandolin, be careful and use thinnest setting to shave the shallots. - If you do not have a mandolin, go ahead and mince the shallot with a knife. Try your best to get all the shallot pieces to be the same size to fry evenly. Still be careful. - Add burger patty to fry pan, immediately press down to release steam, and let cook for around 2-3 minutes. - After adding burger, add shallots to sauce pan with fry oil/fat and raise heat to medium/medium-high and begin stirring. - If you prefer toasted burger buns, go ahead and preheat a cast iron skillet/fry pan over medium heat. Add butter and burger bun once done preheating and toast for 1-2 mins. - Take a second to flip your burger over and press down again once more to release steam. Add your choice of cheese on top of cooked burger to melt (I chose American cheese). - While constantly stirring shallots, after 3-4 minutes they should begin to take on color (or at least look translucent). Keep stirring for another 1-2 minutes as the edges of the shallots should turn darker first before the entire shallot. - If burger is done first, place burger on bottom bun and finish shallots. - If shallot are finished first, lay on a paper towel to absorb excess oil, and lightly season with salt. - Once the other is finished, begin building your burger by adding the fried shallots and adding sauce to top bun. - Eat 'Em Up!

I was rewatching the stream for last night’s game since I was there. Jeremy Branham made note that Dylan Maxcey will be out for a few weeks with an ankle injury. So unfortunate to hear that since he was starting to piece everything together at the plate, but having someone like Riley Jackson come in and easily make a difference offensively and defensively has been immensely huge.
