Cucumber is a fruit.
We can split hairs between culinary and botany.

Botanically, a fruit is a seed bearing structure from a flower. *cucumber, pumpkin, squash, watermelon have male and female flowers. One plant can pollinate from its male flower to its female flower and that female flower will produce the fruit, which holds the genetics in the seed. Cross pollinating is fun, from one plant to the next.
Roots: carrot, radish
Leaves: kale, spinach
Flower: broccoli, cauliflower
Tuber: potatoes
Culinary-
Vegetable: plant part to have a mild or savory flavor
Fruit: plant part typically sweet or tart used for juices, desserts, snacks
Other Growing Community-
Veg, or Vegging: the stage of a plant’s life cycle between first true leaves and flower.
Microgreen: stage of plant’s lifecycle between sprout and veg, photosynthesis occurring. Maximum nutrition profile for consumption. Has cotyledons, not “true leaves”
Sprout: stage of plant’s life between seed and microgreen. Grown in dark, damp. Then sometimes introduced to light to make cotyledons turn green. Short term. Sprout has nutritional value of the seed.
