The instruments on the plans are measuring perpendicular to the ground. Meaning if you keep it straight then you follow the arc around a circle. The plane remains parallel to the ground because it’s 100x the planes length of gradual curve, curve that’s flat from the instrument’s perspective.

738 flying at 550MPH Roughly 8 inches of drop per mile travled 4,400 inches dropped over an hour (366.6') Either the plane is flying at a constant nose up angle of 0.00723° (which with gyroscopes we can see it's not the case) Or they'd constantly have to keep pulling the nose up to regain altitude and you'd have a ton of people complaining at constantly being yanked into their seats (not the case) Or they climb to 39,000 feet initially, level off, and know that even after 10 hours of flying they'd only loose 3,666' of altitude. But with various ground radar/gps/radalt systems reporting data we don't see this. Orrrr basically every modern avionics system ever made, across all countries from INS gyroscopic to GPS to radars had a "calibration" placed in where true zero horizon was at the 0.00723 deg raised. Or the Earth is flat. 🤟
