@RobTricchinelli After confit let it cool in the fat so it stays in tact. Preferable to cool overnight in fridge. Slice and deep fry to order.

@RobTricchinelli Rinse the PB and confit it for 8-12 hours. You can use vegetable oil to start your confit, but save the fat after your done and it’s now your mother fat. Can be used for hollandaise at brunch or my preference is to emulsify it in a blender for bad ass Mayo.
