Could Argentina invade the Falklands again? Well, they haven't got any carriers. We've got 2. They haven't got any submarines. We've got 9. Two tricks. 1. Buy a Weber Rapidfire Chimney Starter so you can get fresh coals going seperate to your BBQ. Place it on a foil tray, and that tray on top of a pizza baking stone (so nothing burns below), while coals are cooking up. That way you can easily pour in new coal when they're ready, without ever breaking away from cooking. 2. Pre-cook chicken in the oven. You want to par cook it so it's only finished on the charcoal for the char taste. This way you save tonnes of time, and the chicken still stays super moist and tender. I finished off 20+ Chicken breasts/thighs in a under 20 mins using this method. Interestingly this is also how a lot of Peri Peri places like Nando also do their cooking. The flame grilling is only the final finishing stage.
