Something I've noticed of millennials and zoomers is they take a lot of trips. This wasn't something Gen X did. You'd do a road trip now and then, sleep at a rest stop, maybe a motel. The brunch and travel stuff is a recent trend, and it adds up quickly.

If you’re new to cooking, I think it’s fine to not have fish sauce or rice vinegar or chili oil if that’s not your preferred or personal cuisine. But Alyssa is right: if you like that stuff, it should be part of your pantry! You don’t have to limit yourself.
And it’s not like you’ll only use it once. Your ROI on pantry products goes up over time. Never think about ingredients as one-off if they’re dry or shelf-stable. Your cost per use goes down every time you make the dish. Yes, that $5 bottle of sesame oil seems expensive at first, but if you use it twice a week, the initial cost gets, technically, cheaper.

I’m so very sorry to continue with the cooking discourse, but this is maddening Fish sauce, chili oil, rice vinegar, and sesame oil are all pantry staples that last every bit as long as olive oil, apple cider vinegar, and ketchup! You don’t have to pick one cuisine and only stock your kitchen for that — it is entirely reasonable (advisable even!!) to stock for a few favorite regional cuisines It will make your cooking SO MUCH better, easier, and enjoyable, and you can do so slowly to match whatever your budget is
