Ackee n Saltfish A weird dish, but surprisingly tasty Salt Cod - boil off salt 3 water changes Sautee garlic / Onion , add diced tomatoes, cook down 10 mins Cracked black pepper tot of butter scald the "ackee" with boiling water (just to be safe / sure) fold into mixture, turn heat off Absolutely fantastic with fried dumplings or fritters to scoop it up Even yellow yam and white taters go well with it
