If anyone is interested this is the recipe I use for chorizo. It’s very heavily spiced but very good. I use fresh ground pork shoulder. I’d prefer to know what’s in my chorizo. I’m not into salivary glands and the other garbage in store bought. I just make 8oz portions with plastic wrap and freeze in a ziplock. I strongly suggest wearing powder free nitrile gloves when mixing this and washing your hands well afterwards as well. Cook this with a range hood fan. 😆 It will make one of the best chorizo egg and cheese burritos you’ve ever had. chilipeppermadness.com/recipes/mexica…

I don't know if it was the Famag I heard about after I bought the Ooni or another one but I'd heard about the Kys. Both are almost double the price of the Ooni ($1200-1400 versus $800) for the same size (~7 qt). If you don't mind the industrial look, Vevor makes a 7 qt spiral mixer for about $550. I honestly looked at them a bit but decided to splurge.

The Ooni has a minimum dough amount which is a bit higher than most single sourdough loaves (almost 600g of flour). I just do double batches (I'd been doing them anyways) and it operates fine. I've heard people complain about the beater attachments and small amounts of things like cookie dough but my KA excels at that so I just use it. I know some people love the Ank but it seemed too similar to my KA and I wanted a spiral mixer that's why I went with the Ooni.

@HomeCookinWell I bought an Ooni to use for sourdough and bread in general (e.g. pizza). I still have my 25 year old kitchen aid that I use for cookies and stuff like that (smaller batches) and for the tools (shredder, pasta maker, etc).

If you grow onions or shallot, don’t ignore these beautiful blossoms. When they open they make for charming little garnishes and are packed with allium flavor that add to and enhance your presentation.

A play on chop cheese for anyone who cares. Sauteed beef with shallot and mozz/proc chopped into it on a toasted roll smeared with Calabrian chili aioli, chopped giardiniera pickles, tomato and lettuce, parmigiano, and stracciatella. It was tasty.

@LennyKravitz 1996 Boston Orpheum theatre They played “Let Love Rule” stopped half way, got off stage, and the crowd just kept singing the chorus. They all came back out in full force ROCKED the 2nd half, Lenny came off stage in the crowd belting out the rest like the Boss he is. Amazing night
