@TonyMcCreath @brodieseo That would be my concern: How many indexed pages do you have with active links to products on page 2 etc.? There's a reasonable chance that if you canonicalise paginated category pages, some products will have zero live links to them.

@brodieseo I like your take on it. How does Google treat product pages where it does not see any active links to them? Sitemaps make them known to Google, but they don't provide PageRank or a verification that the page is of value.

Pagination on eCommerce category pages: what is the best approach to take with respect to the canonical tag?
In general, I've been coming to the conclusion lately that I disagree with the guidance provided (to an extent) on this topic within Google's developer docs.
According to Google's doc, it is said that you shouldn't use the first page of a paginated sequence as the canonical page (instead making it a self-referencing canonical), along with various recommendations for making this setup function best, such as having distinct titles e.g. Page 3 - Mens Shoes.
If you were to follow this guidance, with many large and prominently ranking eCommerce *not* doing so, it results in a significant amount of pages appearing within Google's index that don't serve a purpose in Search (in terms of being discovered and clicked on by searchers).
This poses the question: what is the actual benefit of taking this approach? And does it help with product page discovery by having those paginated URLs being indexed by Google?
With the significant changes happening in the eCommerce space on Google in recent years in terms of the rising importance of product feed data, it starts to put this advice into question. Google's doc even mentions that product feeds (along with sitemaps) are key discovery mechanisms.
When I've worked with large eCommerce stores that are essentially going against Google's recommendation for the application of the canonical tag on paginated URLs, it's often difficult to see the downside of this approach. As a result, there is a more tidy set of URLs appearing within Google's index, and the ability for product pages being discovered and ranking is completely normal.
So if there are no clear downsides of going against this guidance, why should site owners follow it? Personally, I like the idea of having only pages that have the ability to rank appearing within the 'indexed pages' report. Everything else can be excluded using the various mechanisms of crawl prevention within robots.txt, or with a nonindex meta tag for a more clearcut stance.
Generally, I agree most of the information provided within Google's documentation. With the use of a self-referencing canonical tag for paginated URLs, the jury is out on this one in my opinion, being a shared opinion from some of the most successful eCommerce stores on the web.
