There’s a post about a guy who says 2 glasses of wine wrecked him for 3 days. I’m reminded of a game Kenny quarterbacked vs the Jets. He showed up from a night out & played horribly. He threw up during the half, came back & scored 28 points to tie the game. When men were men.

Roasted Beet & Goat Cheese Mini Tartlets Ingredients For the Tartlets 1 sheet puff pastry, thawed 2 medium roasted beets, diced 4 oz goat cheese, softened 1 tbsp honey 1 tsp fresh thyme leaves 1 tbsp olive oil Salt & black pepper to taste 1 tbsp balsamic glaze Fresh microgreens or thyme for garnish Instructions 1. Roast the Beets Preheat oven to 400°F (200°C). Wrap beets in foil and roast for 45–60 minutes until fork tender. Let cool, peel, and cut into small cubes. Toss beet cubes with olive oil, salt, pepper, and a drizzle of honey. 2. Prepare the Puff Pastry Shells Roll out puff pastry slightly and cut into small circles or squares. Press each piece into a greased mini muffin tin to create little tart shells. Prick bottoms lightly with a fork. Bake at 400°F (200°C) for 12–15 minutes until golden and puffed. Let cool slightly. 3. Make the Goat Cheese Filling In a bowl, mix softened goat cheese with a little honey and thyme until creamy. 4. Assemble Spoon goat cheese mixture into each tart shell. Top with roasted beet cubes. Drizzle generously with balsamic glaze. Garnish with fresh thyme or microgreens. Tips Add chopped walnuts or pistachios for crunch. Serve warm or chilled. Perfect for holiday appetizers, brunch tables, or elegant party bites.
