Ah shit here we go again.
CORRELATION DOES NOT EQUAL CAUSATION.
In 1912, James Herrick helped formally describe myocardial infarction.
BUT:
Heart attacks did not suddenly begin in 1912, they were just poorly understood before that (like many medical issues), people often died suddenly or from “dropsy” without clear classification
This is more about medical recognition than it is about disease origin.
Secondly,
Seed oils didn’t just appear in a vacuum.
Early industrial seed oils (like cottonseed oil) did emerge in the early 1900s, but widespread consumption didn’t explode until mid–late 20th century, alongside processed food growth, refrigeration and shelf-stable products, and fast food culture.
And at the same time, many variables changed. Such as, smoking rates surged, sugar intake increased dramatically, physical activity dropped, and life span increased (more time to develop decease).
It’s irresponsible to isolate one variable.
Thirdly,
Yes, we’ve eaten red meat forever, BUT, historically it was less frequent and far less processed, modern intake includes processed meats which behave differently in studies, and the overall caloric intake today is FAR higher than it used to be.
The comparison isn’t apples to oranges.
No reliable health source will claim “red meat alone causes heart disease”. They point to dietary patterns such as diets with high saturated fat, processed foods, excess calories, lack of fiber, fruits, and micronutrients. Not red meat.
Lastly,
Both sides do this finger pointing game.
“Seed oils caused everything”
“Red meat bad”
But the reality is: cardio vascular disease is multi factorial. Factors such as metabolic health (insulin resistance), chronic inflammation, lifestyle (sleep, movement, stress), and total diet pattern are taken into consideration.
Bottom line is, modern chronic disease didn’t exist at current levels historically.
But attributing it to a single change such as seed oils or red meat, doesn’t hold up under scrutiny.
The strongest explanation is the combined shift toward industrialized diets and lifestyles, not one ingredient introduced in 1900.
