Believe it or not, I add lentil veggie soup twice today...once at the office cafeteria and one at home (leftovers). I used to not know much about lentils so I didn’t cook or eat them much. But they are a nutrient powerhouse for your body! bit.ly/2JMSOHl

Acorn squash has more health benefits than you probably know. For example, it contains “vitamin A, niacin, folate, thiamine and vitamin B-6, but it is an especially good source of vitamin C”. My favorite way to have it is as part of a soup. bit.ly/2Es7sy9

Recipe of the week: Soraia’s Lentil Veggie Soup (vegan); lentils, carrots, acorn squash, celery, red onion, garlic. Boil veggies for 10 minutes. Add lentils and cover for 20 minutes. Add celery and boil for 5 more minutes. Absolutely delicious!
