@the_dadchef @JohnGon65765765 Once rested, blot dry with paper towel. Hard sear in super hot cast iron and serve right away. No need to rest a second time. Better than Sous vide in my opinion

@the_dadchef @JohnGon65765765 Reverse sear. Season with salt and pepper, set oven to 350*f and cook it to about 5*f within temperature. For picanha top sirloin there’s a good fat cap but little marbling inside the meat so I would reccomend med rare 120-125*f. Remove from oven and let cool to room temp.
