A partial list of things sheep have given humanity, in rough historical order:
Wool. Which meant warmth. Which meant humans could live in climates that would otherwise have killed them.
Lanolin. Which waterproofed the wool, waterproofed the humans wearing the wool, and is still in your hand cream.
Milk. Which the Swiss turned into cheese. Which the Greeks turned into feta. Which the French turned into Roquefort. Which has been in continuous production since approximately 100 AD.
Meat. Which fed every army that marched on two legs from the Bronze Age to the First World War. Mutton is the underrated engine of military history.
Sheepskin. Which became vellum. On which were written the documents, manuscripts, bibles, and legal texts that constitute the written record of Western civilisation.
The entire legal framework of medieval England was written on sheep.
Parliament was literally built on a woolsack, a large ceremonial bag of wool, because the wool trade was the economic foundation of the medieval state.
The Lord Speaker of the House of Lords still sits on one.
We have been so thoroughly carried by sheep that we put them in the furniture.
And now we're told they're an environmental liability.

Very sad to see last night that the Govt plaque that was affixed to the entrance of 569 Lexington Ave in NYC is no longer there! I attended its unveiling in 1989 with my father.
Maybe @IrishMissionUN or @IrelandinNY can enquire further?
