The argument that tortillas in Mexico are better because they’re handmade or use heirloom corn is mostly bunk. Only a small number of tortillerias use heirloom corn. Most tortillas in Mexico today are made with industrialized Maseca flour. You can blame Maseca and the Mexican government who colluded decades ago for mass adoption of instant corn flour, which pretty much replaced traditional nixtamalization almost everywhere. When you see “handmade” tortillas, they’re usually made by hand…with instant mix…not nixtamalized corn.





Prediction I saw on IG they are opening up a Chipotle in Mexico. The comments from Americans are all laughing at the move because they say the food sucks compared to what's here I predict it will be incredibly successful as many American brands are. People here won't see it as Mexican food they'll see it as a higher end USA restaurant brand, maybe even a healthy one, and they'll pull up. Why are pizza hut and Starbucks always packed even though there's better local pizza and coffee? Brand. The new shiny American thing.
