Easy & Healthy Mac & Beef
Prep time:10 mins

Servings: 4
Ingredients:
Pasta:2 cups Macaroni or Cavatappi (corkscrew pasta), cooked according to package directions.
Meat: 1 lb (500g) Lean Ground Beef.
Vegetables:
1 medium Onion, diced (divided use).
2-3 cloves Garlic, minced.
1 Red Bell Pepper, diced.
2 cups Fresh Spinach (or baby spinach).
Sauce:
1 tbsp Tomato Paste.
1 cup Tomato Sauce (or crushed tomatoes).
Optional:* 1/2 cup water or beef broth to adjust consistency.
Seasonings:
1 tsp Paprika (or smoked paprika).
Salt and Black Pepper to taste.
Olive oil or cooking spray.
Instructions:
1. Cook the Pasta: Boil your macaroni or cavatappi in salted water until al dente. Drain and set aside.
2. Brown the Beef:
Heat a large skillet over medium-high heat. Add a splash of oil.
Add half of the diced onion and the minced garlic. Sauté for 1 minute until fragrant.
Add the ground beef. Break it up with a spatula and cook until browned.
3. Make the Sauce:
Add the paprika, salt, and pepper to the beef.
Stir in the tomato paste and tomato sauce.
Let it simmer for a few minutes until the sauce thickens slightly.
4. Sauté the Veggies:
Note: i did this step in a separate clean pan, but you can do this in the same pan if you remove the meat temporarily, or just add them directly if you prefer a softer texture.
In a separate pan (or the same one), heat a little oil. Sauté the remaining diced onion and the red bell peppers until they are tender-crisp (about 3-4 minutes).
5. Combine:
Pour the sautéed peppers and onions into the skillet with the meat sauce.
Add the fresh spinach on top. Stir everything together until the spinach is wilted.
6. Finish:
Add the cooked pasta to the skillet.
Toss everything together until the pasta is evenly coated in the meat and vegetable sauce.
7. Serve:Serve hot immediately.
