In 2018 I was honoured to be asked to cook at Hawksmoor for their annual dream team dinner & was lucky enough to be cooking alongside Chef Selin… Exec chef Richard Sharples & I left that dinner in awe of Chef Selin & her cooking style. Recently while Chef Pip Lacey was cooking here Pip told the kitchen team that in all her years of cooking Chef Selin is the most talented Chef, Pip has worked with! To say we’re all a bit excited about Chef Selin cooking with us on June 22nd would be an understatement! Bookings go live on Thursday at 8pm!

I’ve been told today that’s it’s disappointing that we only have one vegetarian dish on the menu. Gave them the opportunity to cancel. But they are still coming. Just wanted us to know it was disappointing. I’m sure this is going to be a great experience for all of us.

A particularly fine looking trotter, stuffed with calf’s sweetbreads, a little bit of Morteau for a slight smokiness, I’m not really a fan of dried morels so we have used buttons sautéed with some chopped dried porcini, garlic and thyme. Chicken mousse to bind. 👌👌
