Xiaolongbao (soup dumplings) 🥟🍲are a delicious science experiment 👩🏻🍳👩🏻🔬 and they seem like a culinary magic trick. 👩🏻🍳🎩🪄
When you eat them, there’s a little bit of broth 🍲 that comes out.
But it’s impossible to put liquid in a dumpling without it absorbing into the wrapper…
How do you do it? 🧐
When you are making the dumplings you put a piece of solid gelatin, which is flavored like broth and then
you have to time it ⏰
As the dumpling steams,
the gelatin melts and becomes broth again! 🤩
If you overcook them, then the broth will get absorbed into the wrapper.
Here’s a recipe if you want to try it. I’ve made them a couple of times, but it’s definitely easier to buy at a restaurant. 😆
