Sarmale (Romanian Stuffed Cabbage Rolls) 📍 Bukovina, Romania 🇷🇴 Explore Romania: tasteatlas.com/romania There are few dishes in Eastern European cuisine that carry as much emotional weight as sarmale, and few people who carry that tradition as gracefully as Maria, who at 97 years old still rolls each one by hand. The process begins with fermented cabbage leaves, not fresh, never fresh, which have been left to sour for weeks in large barrels of salted water. This fermentation is what gives sarmale their signature tang, and what separates a proper Romanian sarma from every imitation. Each leaf is then filled with a mixture of minced pork, rice, onion and herbs, rolled tightly by hand, and layered in a heavy pot between smoked ribs and more cabbage. The pot goes onto a low flame for three to four hours, some families insist on five, until the meat is tender, the rice has swelled into the filling, and the whole dish has collapsed into something that tastes like it was always meant to exist.
