@Kristin27532713@MNStrayCat@MindfulDIY There are places that make their own pasta…in that case it only takes a couple minutes in hot water to make it ready to serve. These are usually higher end Italian restaurants. So if that’s what you saw then great and I’m sure it was wonderful.
@Kristin27532713@MNStrayCat@MindfulDIY It’s absolutely reheated. It’s cooked ahead of service and cooled with cold water and ice. THEN held cold in a cooler and reheated or “made “ in front of you like you saw in that kitchen. Standard practice. Not judging your opinion just providing context.

@Kristin27532713@MNStrayCat@MindfulDIY Most restaurants will precook their pasta and cool it…then reheat it>add sauce. Unless it’s fresh pasta, the restaurant isn’t cooking pasta to order.
@MNStrayCat@MindfulDIY Which restaurants have you been eating at!? 😭 Never go back there, ALL food is cooked per order, high quality restaurants even toss out anything that's waited too long since it's no longer up to standards to serve to a paying customer
