Filter coffee can be a beautiful way of celebrating delicious coffees. In our experience, most cafes treat them as an afterthought, so they're cumbersome and problematic for baristas to make. But you can build them into your workflow and they can be a delight.

@DustinDK 1750 but we could feasibly make anything from 400sf - 2500sf work for a cafe! When we aren’t in a pandemic, we could use more food production space. Restaurant infrastructure is $$$ though. Around $200-400/sf right now for build out

@NickCho @EspelLuis I’m sure we’re problematic at many levels, but we try to correct for our personal biases as much as possible. That’s not an easy thing to do and I wouldn’t hold ourselves up as a model for that per se. But we are working on it a little more every day.
