Here’s how you can stop it. In Instagram, tap the hamburger icon, go to the Accounts Center. Tap on information and permissions, then go to activity off Meta Technologies. This is where you can find “manage future activity” and turn it off. This prevents Instagram from tracking what you do outside the app. Now, you can go back and check Clear Previous Activity to delete any data they've already collected about you.
