Our Foie Gras Pot de Crème by @itsonlydomo is a rich indulgence. Velvety foie gras ganache is topped with pickled green strawberries (almost like sour candy in flavor), candied hazelnuts, a hint of gochujang, and local nasturtiums.

Toasted Hoja Santa Pavlova is @mel.issasantiago’s debut dessert at Proxi, and it’s a true crowd-pleaser. This crispy pavlova is stuffed with toasted almond and cherry pit whipped ganache, house-made marzipan, fresh cherries, and cherry Hoja Santa frozen yogurt.

Summer Tahini Salad with little gem lettuce, summer squash, and sesame brittle. Perfect for a bright, mid-meal refresh.

Our Chocolate Marble Mochi Cake is swirled with chocolate and sencha green tea, infused with nutty genmaicha tea syrup, and enveloped in rich fudge frosting. Topped with puffed wild and basmati rice dragees and a scoop of genmaicha tea ice cream. It’s time to dig in!

Local tomatoes find their spice in the streets of India with our Heirloom Tomato Chaat 🍅 Crafted with cucumbers, puffed rice, and tart tamarind gastrique.
