I get this question all the time. First- Avoid all the X-Men books since the 2000’s. They do not represent the BEST of the X-Men. If you can start with Giant Size X-Men #1 - do that. If not, start at X-Men #100 and don’t look back. You will enjoy the best decade any comic book title ever experienced. Claremont, Cockrum, Byrne, Smith, Silvestri, Lee are top tier.
