Good morning, cheesebags! This mornings cheese offerings: Morbier. A stunning French classic. A pungent semi-soft washed rind cheese with a much milder taste than it's smell would suggest. The beautiful line in the middle is edible vegetable ash. Legend has it that the makers of comté (whichtakes a staggering 600ltrs of milk to make a 50kg wheel) put any left overs into a smaller mould and covered in wood ash to protect that evening's curds. The left over morning curds would be placed on top of the ash and Voilà! Morbier was born!
