Because the Rudy we know would actually be the 40 year old man sent to Suburu's isekai world then it's doubt ful she would have fallin for him, though had he lost weight and bettered himself there is a chance.
Suburu would be reborn as Rudy and likely Suburu would have treated her differently then Rudy and in the long run it's still a possibility, though I have a feeling Sylvie would have ended up still be the girl he ends up with and possibley only her.
