@jamiegoode @JancisRobinson Maybe not "increase" but certainly acidity is revealed over the course of fermentation - frequently. Especially from whole destemmed berries (as is the norm these days) with thick skins from a dry summer.

@rosscolquhoun Quite similar story: My 3rd Great Grandfather Joseph Johnston - left Bressay for Leith in 1835, former fisherman then a "customs boatman" living at Bathfield Cottages in Nth Leith per 1841 census. I make this wine in their honour!
