Something that many don't realize, Texas has it's own music. As I write this, I'm listening to Josh Abbott band, of my longtime favorites.
In fact, we really have two: Texas music (or Texas country) and Tejano. I don't know a lot of Tejano (not quite my scene) but Texas music is a treat, something that if you haven't heard and miss what music used to be, you should give it a shot.
It is generally referred to as Texas Country, as it has it's roots as a rebellious counter to Nashville, but it has influences of pre-Nashpop, Southern Rock, Blues, the aforementioned Tejano (which does bleed over... one of my favorite is Rancho Grande by Roger Creager)
Texas country artists tend to be independent or part of localized labels. These men and women are true troubadours, writing and singing their art while traveling from town to town.
The sound varies as much as their background, some being straight up country and some being rock and roll.
They work hard and play harder. The life they chose is rough, consisting of constantly travelling around our state (and further) with lonely nights punctuated by bright lights and loud crowds.
They are true to their art and self, singing what they want and not what some producer in Nashville feels will get them on the top100.
If you want some music that is as Authentic as our BBQ... Give it a shot. You'll be glad you did, especially when you explore enough to find those that fit your ear... they may be diamonds in the rough to the rest of the world, but you just might find a jewel that has a fire you never expected to see.
