@Signor_Girasole Round 2 was a success. I am so used to cooking with olive oil that I over heated the tallow. Mistake did not happen this time around and fries were just overly seasoned.
Big success, and an experience to learn from this time.

Caused a 4ft tall grease fire trying to use Beef Tallow yesterday.
Burned a pan, melted the lid, melted medicine bottles and olive oil container (among other casualties) and smoked up the entire house so badly I felt like I got covid after I got things under control.
