This is superior to Texas BBQ.
There is a limit to how much long slow smoked meat one can consume. Eventually you get sick of it. There is no limit to how much grilled meat you can eat.
This is why California grill culture (tri tips, picanha) beats Texas brisket culture

アメリカから肉の洗礼が次々届いていますが、これの何が腹が立つかというと、これ系のポストで主に紹介されている黒い肉の塊は単純な塊肉のステーキではなく、ブリスケット（テキサスBBQ）と呼ばれる、長時間低温でスモークし、手で触れただけでホロホロに崩れるような代物で、手間も時間もかかるうえに、食べられる場所も非常に限られている、日本ではそう簡単にお目にかかれない料理だということです。 つまりこれは 「このでっかいステーキどうよ」 のような単純な話ではなく、設備も技術も時間も全部要求される、いわば到達点みたいな料理であり 「お前の所の飯は良いかもしれんが、流石にこれはお前の国にないだろ」 という、アンクルサムが自慢の最終兵器（肉）による威嚇を行っているというのが正しい。 四国県民のワイ、食える場所を知らない。

@g_a_man2 My beef brisket takes between 20 and 28 hours depending on size. To be fair I sip beer in the morning at the star... then switch to whiskey in the afternoon and night

@g_a_man2 To give you some estimates, smoking at 110-120°C.
Full Brisket: 6.5kg to 9.0 kg, 15-20 hours.
Pork Shoulder: 3.5kg to 4.5kg, 8-10 hours.
Pork Rib: around 1.3kg typically, 5 hours
Entire Chicken: smoking only lightly, as excess smoke makes the flavor bitter. Typically 2 hours.
