Part 2. The biggest food company on Earth in 1989 was owned by cigarette executives. Philip Morris bought General Foods in 1985, then Kraft in 1988. RJ Reynolds bought Nabisco. They ran the US food system for the next 20 years and brought the cigarette playbook with them. Cigarettes had taught them how to engineer cravings down to the molecule. They turned that on dinner. The man who wrote the manual was Howard Moskowitz, a Harvard-trained psychologist originally hired by the US Army to fix a problem: soldiers were throwing away their rations because they got bored eating the same flavor. Moskowitz found a workaround. By stacking sugar, salt, and fat in precise ratios, he could engineer foods the brain never got tired of. He called the magic ratio the "bliss point." For Dr Pepper, he ran 59 different sweetness variations through 3,000 taste tests to find the exact spot where people couldn't stop drinking it. He ran the same exercise for Prego, Pepsi, Vlasic, and Campbell's soup. Sales jumped every time. Cheetos took it further. Food scientist Steven Witherly explained why people finish the whole bag: Cheetos are engineered to melt instantly in the mouth, so the brain registers no calories went in. You can keep going forever. He called it "vanishing caloric density." Italy and America split here. A 2024 University of Kansas study compared the two food systems. In Italy, 28.8% of supermarket food meets the "hyperpalatable" bar, meaning fat-salt-sugar ratios that do not exist in nature. In America, the number is 68.9%. Even Italian items that crossed the line had higher fiber and protein than the American versions, and roughly half of US foods marketed as "low fat" or "low sugar" still met the hyperpalatable threshold. The bag of chips empties because someone measured exactly how much willpower you have and engineered a product to outlast it. The Italian aisle was built by people selling food. The American aisle was built by people who learned how to sell cigarettes.
