@roseromaunt Yeah, half the time it feels like 2 chargers isn't enough pressure when using nonporous and dense solids. I just tried doing fresh coconut chunks in pineapple-chili-lime juice last night and the juice took on more coconut character than the coconut did the juice mix.

I make basically all infusions in my sous vide it’s simply superior to any other method. For syrups I cook them in a saucepan to dissolve the sugar faster though.
