@CaryKelly11 i fried some loose ground beef last thurs for dinner. added curds to see what it was like. the GB was a bit overcooked, so crispy. but the burnt/stuck curds were so freaking good. and the crispy GB that got stuck in with it?! such a nice combo. a happy mistake it was.

Not sure how it's possible but I like cheese curds better than regular cheddar. If you don't know, curds are basically the veal of cheddar. It's juvenile cheddar before it ages, grows up, gets an attitude and moves out. It's much cheaper than aged cheddar and comes in little nuggets of various sizes. Commonly deep fried with a beer batter and I used to eat them in salads or a snack, straight up. They can be addictive though. Recently I learned that they crisp up nicely in a hot buttered skillet. They get crusty on the outside and gooey on the inside. I need more practice at crisping them up, clearly! The bigger ones seem to be the ticket.

Humans spray crops with poison so insects, fungi, and rodents won't eat them. Then they harvest the crops, package them, and eat them themselves. Smart play. The active ingredients are explicitly designed to disrupt nervous systems, reproductive cycles, or cellular function in living organisms. The label warns the farmer to wear gloves, goggles, and a respirator when applying it. The same farmer then sells the produce to a supermarket that puts it on a shelf labelled "fresh." Glyphosate. Chlorpyrifos. Atrazine. Neonicotinoids. Names you can't pronounce, sprayed at parts-per-million doses you're assured are perfectly safe. The bug dies. The fungus dies. The weed dies. The rat that wandered into the field dies. But you, three meals a day, for 80 years? Absolutely fine. Tuck in. The residue washes off, they say. Mostly. Probably. The systemic ones travel through the plant itself and end up in the parts you eat, but let's not dwell on that. Every other animal on Earth knows not to eat the thing that's actively trying to kill it. Humans are the only species that pays a premium for it and calls it lunch.

Instead they: - Price it out through regulation - Tax it for "the climate" - Subsidise the alternatives - Fund the studies that condemn it - Push plant-based menus in schools - Restrict where you can buy it - Shame you for wanting it Medieval lords used forest law and the gallows. Modern elites use policy papers and PR campaigns. The method is softer. The outcome is identical. The peasants stay weak. The elites stay strong. The meat stays on their plates and off yours. Go and look at what they eat at Davos. Then look at what's on the school menu. Then tell me it's about the planet.

But others (you can guess who) weren't thrilled, and they told me to get rid of him. So I protected the orthodoxy I'd been trained to protect. And it took me years to realize what I had actually done. Tomorrow, I publish the full confession. The 2002 autism moms I ignored. The 2017 vaccine safety commission I killed. The 2021 moment I finally broke. The apology I owed Secretary Kennedy. And what I've done to atone. It's hardest thing I've written. I'm sending it out to my list at 6am. Carbs are the best. Funny thing is, I hear so much crap about them from people who have fluctuating weights, going on diets all the time, yet they think they know the answer with high protein. If they know the answer, why does their personal track record show otherwise? Do they realize what they're doing to their kidneys long term? I tell them what I do; 100% plant-based. Lots of carbs, mostly unrefined. That my waist size has stayed exact same since high school and I never use a scale. They tell me it's genes. I tell them nope, testing shows I'm predisposed to be fat and family not like me. They don't want to accept the truth that if we ate like gorillas and chimps, we'd be healthy and strong. Their digestive tracts are also most similar to ours, so logically, we should be looking there for inspiration.
