Chicken: 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces.
Rice: 1 cup long-grain white rice (such as Basmati or Jasmine), rinsed.
Vegetables: 1 medium onion (diced), 1 bell pepper (any color, diced), and 2–3 cloves of garlic (minced).
Seasoning: 2–3 tablespoons of Cajun or Creole seasoning, plus extra salt and pepper to taste.
Liquid: 2 to 2 ½ cups chicken broth.
Optional Extras: 1 can (14 oz) diced tomatoes, 1 tablespoon tomato paste, or a handful of frozen peas.
Cooking Fat: 2 tablespoons olive oil or butter.

Instructions
Season & Sear: Toss the chicken pieces in a bowl with half of the Cajun seasoning. Heat oil in a large skillet or pot over medium-high heat. Sear the chicken until golden brown (about 3–4 minutes per side), then remove it and set aside.
Sauté Aromatics: In the same pan, add the onion, bell pepper, and garlic. Cook for 3–5 minutes until softened, scraping up any browned bits from the chicken.
Toast Rice: Stir in the rinsed rice and the remaining Cajun seasoning. Let the rice toast for 1–2 minutes until fragrant.
Simmer: Pour in the chicken broth (and tomatoes/tomato paste if using). Bring to a boil, then reduce heat to low.
Cook Together: Return the seared chicken to the pot, nestling it into the rice. Cover with a tight-fitting lid and simmer for 15–20 minutes, or until the liquid is absorbed and the rice is tender.
Rest & Serve: Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with fresh parsley or green onions before serving.

Pro Tips
For Extra Creaminess: Stir in a splash of heavy cream and some Parmesan cheese at the very end.
Flavor Boost: Add sliced Andouille sausage along with the chicken for a more traditional Cajun feel.
Rice Texture: Avoid stirring the rice while it simmers to keep it from becoming sticky or mushy.
