This is the biggest lie in Mexico. Mexico City has some of the lowest overall taco quality because everything is mass produced and trucked in to feed 10 million people. The tortillas aren’t real. The average resident is a cheapskates, so vendors buy the lowest quality ingredients they can get away with. And even if they use better ingredients, people complain the price is too high. Mexico is regional. Sonora does beef better. Baja does seafood better. Oaxaca treats corn like doctrine. CDMX just aggregates at the lowest common denominator. Tourists don’t know any better, and Mexico City people (chilangos) love to hype themselves up. In fact, the tacos in the dark green states are better than the tacos in Mexico City.
