@_ourt they literally got sued because they were giving too much of the tip share to support staff and switched to a service charge model I believe. They almost closed because of the settlement and then one the beard award and I haven’t heard a peep about cook and solo being a bad place

@_ourt that nightly gross is probably north of 10k so even on the low end is $4-500 a night on top of $72 for 6 hrs at $12. Fine dining typically pays well and they are paying the $12 because they need experience. Bet they get hundreds of applications for that.

working FOH over the past three years, i can definitively say each house splits tip pools differently. some hosts don't get any share, some only pool amongst themselves, and so on and so forth. "plus tips" is a vague catchall that you typically don't get insight into until hire. but what would i know

@_ourt You don’t understand front of house tip share. Because the host gets 5-20% of the total tips while they’re working for keeping the tables full entertaining guests at arrival and getting them to the bar or helping with rolling settings. A place like Zahav with a price fix cont…
