Oily Olives: From Ancient Roots to Modern Delights. #sciart #scicomm #scienceart #olive #olives #oliveoil #education #ScienceArtHub Olives, the fruit of the olive tree (Olea europaea), have been cultivated and consumed for thousands of years and have played an important role in various cultures. There are hundreds of olive cultivars worldwide, each with its unique taste, size, and color variations. Different olive varieties are generally used for eating and oil production (90% of the global olive production is converted into oil). Some ancient olive trees are thousands of years old, making them among the oldest living organisms on Earth. As essential components of the Mediterranean diet, olives and olive oil are rich in monounsaturated fats and antioxidants (such as vitamin E and polyphenols), which may help reduce the risk of heart disease and inflammation. A bitter compound called oleuropein is present in olives and serves as a natural defense mechanism against pests. During the curing process, oleuropein is transformed into milder compounds, making the olives more palatable for consumption. One traditional method of curing is fermentation, which involves soaking the olives in brine (salt water) for an extended period. Fermentation not only reduces bitterness but also adds unique flavors to the olives. Whether enjoyed as a snack, used in cooking, or pressed into olive oil, these fruits have left an indelible mark on human culture and nutrition. Oily olives: a healthful legacy.
