This Tuscan chef started weeping when I brought up AI today.
As she hosted us in her home built literally 1,500 years ago, for a private cooking lesson with her 91-year old Nonna, she wiped tears from her face.
She could barely speak as she talked about ghost kitchens, robo-restaurants, and how she had to fire her son from the family business because Claude for Excel replaced him. Heartbreaking. 💔

That's not what's happening.
AI isn't replacing roles, it's collapsing cost structures.
The labor that used to justify a $60K/month team now runs through one person with the right systems.
Not because the person is 5x smarter.
Because the software does what five specialists used to do.
SEANs (Software Enabled AgeNcies) aren't firing people to save money. They're building leverage that lets one operator deliver outcomes that used to require a department.
The 15% being cut? They were already operating without systems. AI just made the gap visible.
