Converting between stablecoins is just FX between dollars. USDC, USDG, PYUSD, all dollars, and platforms hold all of them.
Every new dollar is its own island of liquidity. So today you either hit a DEX, where pricing swings and big orders slip, or use mint and redeem, where the price is cleaner but it closes nights and weekends, if you can access it at all.
Mature markets solved this ages ago: a price you can rely on, and a choice in how you execute. A market order for speed, or a limit order for a better price.
